Pressure Cooker Pork


This was created because I forgot to put my pork loin slices into the crock pot before church and needed to come up with a quick dinner.  This turned out really yummy.

(Morning Glory gives it a "10 out of 5", hubby gives it a 4, Lady Slipper wasn't in the mood to eat and I give it a 5)

Note: This recipe uses a Cuisinart Electric Pressure Cooker.  If you use a different pressure cooker be sure to see your instruction manual.

Ingredients:

Boneless pork loin roast sliced into 3/4 inch slices (mine were still partially frozen and I had 6 slices)
4 oz can green chilies (I blend them in the blenders if using whole)
1 14 1/2 oz can diced tomatoes
3 Tablespoons dehydrated red and green bell peppers in 1/3 cup hot water (or use fresh)
3 Tablespoons dehydrated onion soaked in 1/3 cup hot water (or use fresh)

1)Set electric pressure cookery on Browning setting and brown each slice of pork on both sides.

2)Put all the pork slices back into the pressure cooker and pour the rest of the ingredients over the top. Set the pressure cooker on the high pressure setting set for 9 minutes.

3) After the timer beeps use quick pressure release --being sure to wait until steam stops escaping before opening.

Serving Ideas: I loved this dish as is served with the sauce but you could also take one more step and thicken the sauce after removing the pork slices or make a vegetable soup with the sauce.
