Whole Wheat Oatmeal Sandwich Rolls

We love to cut these open and use them for tuna melts, peanut butter sandwiches, or just eat them as rolls. I love how quick they are as compared to making Homemade bread so sometimes I just make these instead.  They are also easier to send for sandwiches in lunches because they are not as crumbly as day-old homemade bread.

1)Preheat oven to 425 F. In a large bowl, or Bosch Mixer, combine and let sit a few minutes until the yeast  foams :
-3 cups warm (105 to 110 degrees) water
-1/2 cup honey  ($1.12 Amazon Prime)
-1 cup olive oil  ($1.44 Amazon Prime)
-6 Tablespoons Yeast ($0.54 Amazon Prime)
-2 beaten eggs            ($0.26 regular white, Costco)

2) In another large bowl Combine:
-8 1/2 cups Whole Wheat flour ($2.30, Amazon Prime Subscribe and Save)
- 2 cups old fashioned oats       ($1.54, Amazon Prime)
-1 Tablespoon sea salt        ($0.12 Amazon Prime)

3) Add the dry mixture to the wet mixture a small amount at a time until combined.
Note: If using a Bosch Mixer, use the dough hooks and set at speed 2 as you add the flour.
If blending by hand, it is easiest to begin with a whisk and when it gets too thick switch to using clean hands or a wooden spoon.

4)Shape the dough into 48 "hamburger patty size" rolls (12 per cookie sheet) and place on a greased cookie sheet.  Allow to rise for 10 minutes.
(Optional: At this point I split the dough in half and use half to make freezer dough for sandwich rolls, and 24 rolls  to bake now)


5) Bake at 425 F for 10 to 15 minutes.

6) Remove from cookie sheet and allow to cool on racks.

Estimated cost: $7.32 for 48 Sandwich Rolls= $0.15 per roll
My actual out of pocket cost: $0.00 (I used my storage items)




This recipe was inspired by "Ione's 30 minute Hamburger Buns" from "The Ultimate Food Storage Cookbook" by Arlene Mickelsen. p. 87.  She does not use oatmeal and uses powdered eggs.
