Camping Tinfoil Dinners At Home



1 large potato (sliced thinly or diced 1/4" cubes)
1 lb ground beef
1-2 small zuchini(sliced thin or diced in 1/4" cubes)
minced onion
salt and pepper to taste

Put cut vegetables in glass or other microwavable container. It cooks better if it is covered. (You can use any veggies you want. I just had a big zuchini to use up) and then put tiny pieces of ground beef in. sprinkle on the minced onion and salt and pepper. Put in the microwave for 3-5 minutes at a time checking to see when the beef is cooked through and the veggies are crisp tender. It depends on how your microwave cooks. (If veggies are cut too large, they will take longer to cook and the meat will get overdone)This reminds me of tinfoil dinners but doesn't need a fire or the oven. Good for a summer at-home version of this camping favorite. Is great served with ketchup, or with a white sauce or gravy.
